I used part of an incredible recipe that I hope to one day re-create to it's full extent one day (the original recipe being for Campfire Delight Cupcakes).
The recipe calls for buttermilk, which I didn't have, so I added 1 3/4 tsp Cream of Tartar to 1 cup of milk. The cupcakes turned out great, so I'm not sure if make any difference.
The recipe also called for coffee. I wanted to try this because I previously rejected a recipe that used coffee for the last batch of chocolate cupcakes I made. The result: you couldn't taste the coffee and it did bring out the chocolate flavor.
The verdict: my husband and I each ate 3...these will definitely be back with a graham cracker crust and marshmallow filling.
