My office has a monthly birthday celebration, although I think it would be so nice to do birthdays like on The Office (and have a birthday party on the day of that person's birthday!).
We rotate who brings treats for the birthday recipients and May happened to be my month to bring something. I quickly surveyed all the birthday-ers and decided upon chocolate cupcakes with chocolate & white icing.
After I whipped up the batter, I began to fill my new, brightly colored mini-cupcake liners with a teaspoon scoop. This ended up being a very messy experience, and my husband, who is so very helpful, had the brilliant idea of using the piping bag to fill the liners. Using the piping bag worked great, except for the fact that I bought bags too small to do anything with and had nothing to clamp the top.
As the first batch came out and I transferred them to the cooling rack, I popped one in my mouth, when suddenly, I realized...they taste like BROWNIES! I was so utterly disappointed, but my wonderful husband pointed out that they still taste really good. :-)
I proceeded to bake the rest of the batter and make fluffy white icing (that accidently had Meringue Powder instead of Cream of Tartar) and chocolate buttercream (that oozed out of the piping bag onto the carpet). All in all they taste good, but I'm a little hesitant to try so many minis with two different kinds of icing again.
So here are my chocolate cupcakes (that taste like brownies) with chocolate buttercream & fluffy white icing. Happy Birthday co-workers!
